One of the largest orders this year comes from our local utility authorities. Each student is responsible for a position in the company. Students wash and detail vehicles one day a week and prepare meals that are sold to the staff and community. During the holiday season, students turn the classroom into a mock restaurant where the students fill the roles of cashier, servers and wait staff.

The OTC School Store is open two days per week throughout the school year. The store is located in the Adult Student Center at Okaloosa Technical College. The store is operated by the ESE students from the Career Experiences Class. They sell t-shirts, hoodies, hats etc. in the store. These students gain experience in customer service, inventory skills, merchandise presentation and cashier skills.

Sugar Plum Shoppe is open for one week in December each year at Choctawhatchee HS, and it is also open to the public from 7 AM-4 PM. ESE students make a variety of beautiful holiday items, ornaments, wreaths and decorations as well as baked goods and pre-mixed/layered jars for making soups and cookies. ESE students also serve as cashiers and make transactions using a calculator as well as a notepad. They will also make deliveries to teachers at the school who place an order. Students learn to work cooperatively in groups and are also responsible for completing individual projects. Skills include measurement, woodworking, baking, reading recipes, making price calculations, sewing, beading and painting to name a few. The local newspaper always does a feature article on the Sugar Plum Shoppe. Students must also do a self-assessment rubric each week in which they rate themselves on various employability skills. Proceeds from SPS go toward Community-Based Experiences and field trips during the school year for the ESE/VE students.

The automobile detailing services are available to all OkaloosaCounty School Employees and the adult students at OTC as well. Services include Exterior Wash andInterior Detail. All detail services are completed by the students. Students also gain customer service skills by returning keys and accepting payments.

We plan to implement a coffee delivery service this school year. We will offer the service to OTC/CHOICE High School employees and OTC adult students as well. The services will be performed by the ESE students who are enrolled in the Career Experiences Class. Students will take orders, make the coffee to order, deliver coffee and accept payment.

My ESE VE self-contained classroom does a coffee cart for our staff before school each day. Students work as baristas, collect money and converse with adults when they come to get their coffee or refresher drink. Carroll's Cafe was started to enable the students to practice life skills such as working in a coffee shop, practice their social skills and money skills.

Our interns make a variety of item we sell to the staff at our schools, we make lanyards, keys chains, rice heating bags, rice fidget bags, hacky-sacks, school inspired cups, holiday items, and sugar scrubs. Our interns are also gift wrapping for the holidays. Our interns work at our coffee shop each morning where we sale muffins and hot and cold beverages to the staff at our local middle school and high school. We do class lessons on work and social skills in class. We also go off-site to Goodwill and work once a week. Our interns also do our own grocery shopping every other week at Wal-Mart.
